Paleo eating is all about creativity. Although I absolutely love cooking from paleo recipes, sometimes you've just got to create your own dishes based on what you have in your fridge. It's all about mastering working with what you've got.

To support yourself in eating paleo everyday and working with what you've got, you have to always have lots of fresh veggies, herbs and dried seasonings on hand. If you have this, there is no limit to the yummy dishes you can throw together at a moments notice.

So, the other night I wanted to make a nice dinner for my partner and I, and I didn't have time to plan ahead. So I had to do what I do best... I looked in the fridge and I thought up a delicious masterpiece.

I made sole fish lettuce wraps with 2 different taco toppings!

Sole Fish Ingredients:
Sole Fish (of course)
Cumin
Peprika
Turmeric
Corriander
Salt
Pepper
Tomato Paste
½ cup broth

Sole Fish Cooking Directions:
I mixed all the seasonings together and put them in a saucepan over medium heat for 1 minute or so. Next, I put the fish in the pan and stirred it a little to make sure all the seasons were even spread on the fish. I let the fish cook for about 12 minutes and it was done.

1st Taco Topping Ingredients:
Cabbage
Carrots
Squash
Bell Pepper
Mayo
Lemon
Salt

Directions:
I just diced everything really small and mixed it all together with the mayo, lemon and salt. When you make this yourself, the proportions are up to you. I used lots of cabbage, it's was the base of the salad.

2nd Taco Topping Ingredients:
Cabbage
Red Bell Pepper
Squash
Mango
Olive Oil
Salt
Lemon

Do the same thing as with topping 1. You can see the ingredients of both toppings are quite similar that's because these are the items I had in my fridge; and if you make them yourself, you will see that a completely different taste was achieved by the slight differences.

After I prepared the fish and toppings, I just got my ice-burg lettuce at the fridge, washed it, chopped in half and carefully peeled the outermost layers to create the perfect wrap.

By getting rid of carbohydrates from the diet and instead consuming your calories from animal fat and produce, your body is taught to break down fat instead of carbohydrates for energy.

So where to get started? For some people this diet is a substantial change to the status quo, and if you've been eating a particular way for most of your adult life it is not easy to switch at the flip of a coin. Here are a couple steps to help get you on the right path:

1. Discard all of your processed foods
This is an absolute must. It doesn't matter if you are getting with the paleo plan or if you are on a standard calorie-counting diet, processed foods are the most detrimental thing you can put into your system food-wise. Fold into the salad and toss gently until evenly coated. Chill overnight to allow the flavors to blend. Serve near room temperature.

Now I did not put garlic in there, but if you ask me garlic goes in almost everything so I would add some chopped or minced garlic to the marinade. You want to bring home the best that you can afford, not cheap pork chops. Pork loin chops are the ones that are the most tender, but sometimes the T-bone chops will work just as well.

And do not buy thin, thin, thin, thinking that you are going to save money. The flavor, taste, and texture will not be there. It does not pay to scrimp sometimes and this is one of those times. Then you will have people eat these and they will be turned off to pork thinking all pork chops are the same.

And That Is Simply Not True!

Trim off all of the extra fat and place your chops in a ziploc bag to marinate in. Thick chops, at least one inch thick. Chill your pork chops for at least one hour. Remove them and place on a plate and let them come to room temperature for about 35 minutes or so. Preheat your barbecue to high.

There is nothing like a great sugar cookie recipe. Don't buy the roll of Pillsbury Dough, you can make a superb cookie that will remind you of the days when Grandma made them.

Grandma used to sit by the fire and drink her tea and Grandpa used to sip his coffee made from his French Press, before it was trendy. I loved seeing them sit there enjoying the day. When we walked in the house there were smells coming from the kitchen you just couldn't imagine. The sweet smell of warm sugar cookies invaded your senses. You knew today was going to be a treat.

It was a tradition that we enjoyed every year. The kitchen was filled with flour storms and the counters were sticky from Buttercream frosting. We had tin cookie cutters spread all over the table. I liked the boot best, my sister liked the angel.

Grandma had a special way with those cookies and she handed down the recipe to me. I was to teach my kids how to make these wonderful holiday sweets. It wouldn't be Christmas time without this recipe of Yummy cookies.
I am publishing it because I want you to enjoy the best sugar cookie recipe ever.

Grandma's Favorite Sugar Cookie

1 cup white sugar

1 cup powdered sugar

1 cup butter

2 eggs beaten

1 tsp cream of tarter

1 tsp baking soda

1 tsp vanilla

4 cups flour

½ cup corn oil

Cream the sugars and butter together. Mix the beaten eggs, vanilla and corn oil, in. Add the dry ingredients .Mix all the ingredients well and chill overnight.
Bake at 375 F for 8-10 minutes....DO NOT OVERCOOK.

We used to make the funniest colors to decorate the cookies, most of them looked inedible. They tasted heavenly, though. We figured if we made them look gross enough, the adults would leave them alone. We were wrong. Everyone knew they were Grandma's famous sugar cookies from her handed down recipe book. This page was splattered with all sorts of colors. I have that book now. I love making these cookies with my kids.

Grandma's Favorite Frosting (don't forget the food coloring)

2 cups of powdered sugar

½ cup butter melted

1 ½ T Milk

1 tsp vanilla

Cream sugar, butter and vanilla. Add a small amount of milk (1 to 2 tablespoons). Beat until fluffy. If frosting is too sweet add a little more milk.

Try it this season. Enjoy your family and brew some wonderful tea or coffee and relax. Take the time to make memories with your family or neighbors or friends.

It's that simple. What isn't so simple is keeping your commitment. If you're like me, or most humans really, goal setting easy. How many New Year's Resolutions have you made? How many have you fulfilled? So before you jump into the Paleo diet only to abandon it a few days in, set yourself up for success.

Make a Paleo diet meal plan

My least favorite part about adopting a new healthy eating regiment is that invariably the cookbooks will list out recipes which require ingredients I don't have. Since you can't buy 1 tablespoon of paprica, I end up buying a whole bottle... and more than I need of countless other ingredients. Meal plans are tedious, boring, and rigid. "I'll just go with the flow," I tell myself. The problem is that going with the flow requires a mastery which I do not yet posses. I need a Paleo diet meal plan because if I don't have one, I'll end up eating unseasoned chicken breast and apples for every meal of every day. That is not sustainable.

You can make a plan yourself or find one online but you need a plan. A goal without a plan is only a fantasy. Map out what you'll eat for the next 1 - 4 weeks. You don't need an exact meal by meal "I have to eat this Tuesday for lunch" but you should have enough meals to get you through. You should also make sure you have enough breakfasts, enough lunches, enough dinners, and enough snacks. Never underestimate snacking. If you don't plan for snacks, you'll either ditch your Paleo diet meal plan immediately and opt for a non-Paleo snack or you'll be so hungry when meal time comes around that you don't stick to the Paleo diet meal plan. You don't want that. Include a variety of foods in case you're just not in the mood for something and make sure you, at least in the beginning, stick with what you know. If you can't prepare, or don't really like, the food you're eating, you won't stick to your Paleo diet meal plan.

Evolve: if humans did it, so can you.

Start with foods you know and like but don't stay there. Gradually introduce new foods into your Paleo diet meal plan over time. Your first week should be only foods you know and love. Your second week, try to eat something new once per day. After that, try to incorporate something new and unusual into every meal. A key component to the Paleo diet is variety. Hunter-Gatherers didn't have the luxury of a grocery store, or even a Paleo diet meal plan; they ate what was available. You need to intentionally branch out in the beginning because we have been conditioned to only eat certain types of food (cereal, bacon, eggs, and toast for breakfast; a turkey sandwich for lunch, pasta or casserole for dinner).

Ultimately, a written meal plan and specific commitment are crucial for your success in converting to a Paleo diet. Hey, if humans could do it before the invention of indoor plumbing, I think you can handle it too.

The cultivation of grains began the process of refining foods, which were otherwise mostly inedible, and introducing those new products into our diet - yet another thing our natural metabolisms were not well equipped for. Some results of these changes in our diet are that 7 out of 10 Americans are currently either overweight or obese. The sweeping changes in our modern day diet have been brought on by agriculture, but our genes have not changed as quickly. We are still 99.99% identical in makeup to our hunter-gatherer ancestors. Our bodies still require the same high-protein, low-carbohydrate diet. Genetically we are poorly equipped to handle the high-carbohydrate, low-protein diet of modern times.

Simply put the Paleo Food List contains all foods EXCEPT all grains and diary and all the relevant by-products.

MEATS: inclusive of organ meats i.e. kidney, liver, tongue, heart etc etc: beef, pork, lamb. rabbit, goat and game meats are allowed as long as the cut is lean with all fat trimmed off.

POULTRY: chicken, duckand game bird - skinless and fat free.

EGGS: chicken, duck, goose, seabirds and quail: The allowance for the week is 6 eggs. This should be more than adequate. Remember to include any egg mixed in a recipe eg like in a meatball or a coating.

SEAFOOD: all wild and commercial species available; whitefish, redfish, game fish etc; shellfish, lobster, crab, mussels etc etc

OILS: the most popular is olive oil however other oils such as avocado and nut oils are also acceptable and occasionally ghee can be used in place of oil.

Below is an indication of fruits and vegetables allowed. These are not strictly the only ones you can use it is just an indication. You may of course have different varieties and these would be totally acceptable - as long as it is fruit or vegetable and not grain then you are safe

Note; LEGUMES are NOT part of the Paleo list not even sprouted legumes - it contains a toxin which is produced to protect the plant from being eaten by grazing animals (and humans) and even cooking does not reduce the saponin content.

There is some controversy over the use of root vegetables however try using the tops to the carrots and beet in place of the bulb. If you find it impossible to live without your root vegetables use them in moderation and if weight loss is sluggish - leave them out altogether. The Paleo list contains more than enough to feed your imagination, entice your creativity and nourish your body and soul.
