How to Make Paleo Diet Chicken and Fish

Citrus Sole Packets

Ingredients:

12 baby soles
1 cup of diced baby carrots
2 cups of Swiss chard chopped
1 tablespoon virgin olive oil
1 celery stick thinly diced
2 finely chopped onions
Juice of one orange
Salt and ground black pepper
12 slices of lemon

Method:

1. Preheat you over to 450 degrees F
2. Use a large frying pan and brown the onions, carrots, celery and chard till soft and allow to cool and add the fresh orange juice season and set aside
3. Place foil on a baking tray and brush with olive oil then lay the soles onto the baking tray and spoon about 2 tablespoons of the vegetable mix over the soles
4. Then roll each sole fillet and secure with a small skewer
5. Sprinkle with pepper and top with a slice of lemon as well as any remaining sauce
6. Wrap the fillets in foil and seal the edges
7. Bake for around 20 minutes
8. Sprinkle some lemon juice on the fillets and serve with a green salad

Baked Chicken with Pomegranate Glazing

Ingredients:

1 whole chicken or 8 skinned chicken breasts
1 large lemon
Fresh rosemary
2 cups of unsweetened or fresh pomegranate juice
Seeds from 2 pomegranates
1 teaspoon of Dijon or French mustard
4 cloves of finely chopped garlic
2 tablespoons of arrowroot
1/4 teaspoon of freshly ground black pepper

Method:

1. Preheat your oven to 375 degrees F.
2. Piece the lemon and add whole as well as the rosemary to the inside of the chicken.
3. If your using chicken breasts cut into the breasts and stuff with lemon slices and rosemary
4. If a whole chicken tie the legs together and place in your roasting pan. If your using breasts tie the breast together with toothpicks and place in the roasting pan
5. Bake the chicken for 20 minutes and keep basting.
6. Add the pomegranate seeds and reduce the heat to 325 degrees F and bake for 1 hour
7. Pour the liquid off once the chicken is cooked and skim the fat off and add the pomegranate juice
8. Cook slowly over a low heat and then serve with the chicken

You can have fresh vegetables of your choice as well as a serving of rice with your chicken as well as a green salad.

Recently it's come to my attention that, for some reason, there are very few sardine smoothie recipes out there. For that matter, there aren't enough good fish smoothie recipes of any kind. So, this must be the right time to share one of my favorite sardine smoothie creations with you.

How To Make The Best Paleo Primal Sardine Smoothie

Why sardines? For one thing, they are small. Smaller fish are lower on the food chain and have much less contaminants (mercury, PCB etc.) stored in their fat than larger fish. When it comes to fish, smaller is always better. (This is most likely why you will be hard pressed to find even one whale smoothie recipe.)

Sardines might be small, but when it comes to nutrition they are huge. Did you know that one sardine smoothie contains about 25% of your daily requirement of calcium? In addition to that they are loaded with vitamin D, B12, niacin, phosphorus, selenium and of course protein. As an added bonus sardines are also highly anti-inflammatory.

Personally, I believe that most people don't give enough thought as to the inflammatory aspects of the food they eat. Chronic or low grade, long lasting inflammation, is believed to be the root cause of many age related diseases, (almost everything from arthritis to alzheimers, according to some sources). Some foods are inflammatory and some are anti-inflammatory. It's always a good idea to balance the two as much as you can.

Now that we are all excited about sardines, how do we incorporate them into a delicious smoothie? It's a two step process and I'll walk you through it.

Step one, making the basic juice.

Here is what you need:

One Juicer

Several stalks of celery

1/4 yellow onion

2 or 3 jalapeno peppers

One raw beet

Here is what you do:

Put all of the above ingredients into the juicer and make the juice.

Step two, making the smoothie.

Here is what you need:

One food processor

One tin of sardines

The juice from above

2 or 3 shots of tequila (optional)

Here is what you do:

Combine the first two ingredients and place into the food processor. Blend until smooth.

Because this seems to be an acquired taste for some people, you might want to take the optional shots of tequila before drinking the smoothie.

Another way you can enjoy the health benefits of sardines is to just put them on your salad. That's usually what I do.

Grilled Steak, quick and easy to prepare.

Ingredients:
Try to get steaks that are 1-inch to 1 1/2-inches thick, from tender cuts (Rib or Ribeye, London Broil, T-bone).

After 2-3 minutes, open lid and flip steaks. Let second side cook for about the same time. Now move your steaks to an area with indirect heat, close lid and leave them until they reach a temperature of 49 - 60 °C / 120-140 ºF. Don't serve it right away. Let the steaks rest for about 5 to 10 minutes depending on the thickness, so the juices will redistribute within the meat. Resting should be done on a warmed platter with a piece of foil covering over it. Serve with tomatoes and avocado.

Grilled Fish in Foil

Ingredients:
4 serving size fish fillets, (Halibut, cod, or other white fish.)
zest of 1 lemon
Sea salt and fresh pepper
Chopped cherry tomatoes
1tsp dried oregano
1/2tsp red pepper flakes
½ tablespoons chopped fresh parsley
4-6 zucchini or squash thinly sliced
1 medium onion thinly sliced
Extra Virgin olive oil as needed
Tear off 4 sheets of aluminum foil.

On each sheet, lay the fish fillets in the center with onion, zucchini or squash. Mix and sprinkle lemon zest, oregano, basil, red pepper flakes, salt & pepper, and top with cherry tomatoes. Season with sea salt and fresh pepper, add olive oil as needed. Turn up all the edges of the foil sheet, and fold it to make a packet.

Place packets on grill, use medium heat, and cook for 10-15 minutes depending on thickness of fish. On thicker cuts, try to use indirect heat. The fish should flake easily with a fork, when done. Enjoy!

Garlic cloves or minced garlic

salt

Olive Oil

Parsley

Lemon or lime juice

Cut off the tops of the green peppers and remove seeds. Cut off the tops of the jalapenos but do not remove seeds. Cut the outer skin off the onion and cut in four sections.

Place these items in a food processor and run until everything is small. I usually do not leave big chunks of the jalapeno as small chopped bits blend better and give flavor throughout the salsa.

Drop in 1 teaspoon on minced garlic. You can use the stuff out of the jar from the store or put in 2 whole cloves.

Wash the tomatoes and cut off the tops and cut them in half our fourths and put them in the food processor on top of the already chopped up peppers and onions.

Process these until the tomatoes are well chopped. Open the food process and remove the container and put a strainer in your sink and pour the mixture from the processor into the strainer and let strain all the excess liquid from the tomatoes. I usually use my well washed hand in their to stir up the salsa and speed up the process but you can use a big spoon. When Most of the excess liquid is gone dump the strainer mixture into a bowl or container.

Add 1 teaspoon salt, 1 tablespoon dried parsley, 3 to 4 tablespoons lemon or lime juice. I prefer lime juice but once ran out and used lemon juice and it worked just as well. I use the bottled juice but it you have fresh it would be even better. Add 2 tablespoons of extra virgin olive oil.

Stir everything together with a spoon and quickly get out your chips and get some because as soon as your family knows you have homemade salsa made it will not be around for very long.

Juicing Beets Recipes

This is my article dedicated to juicing beets recipes.
Frankly, I love the things, and I really find, I don't know if it's just me, but every time I feel tired or I feel a cold coming on, juicing beets really helps me. Maybe it's a placebo thing. I don't care. I'm making an article especially for that special vegetable in my life.

Juicing Beets Recipes

So here of some stats of said vegetable;

Beets contain calcium, iron, sulphur, potassium, beta-carotene, choline, and vitamin C.
They are high in manganese, an important mineral for brain function.
Beets are also high in minerals that strengthen the liver and gall bladder, and are the building blocks for blood corpuscles and cells.
Beets are famous for their ability to cleanse the blood.

Beet juice is super concentrated so I'd strongly advise you dilute it with water or other juices.
Purchase firm, rock-hard beets. Being a root, they can be stored for months in the refrigerator.

Juicing beets recipes:

Carrot, spinach and beets

4 carrots

beet with greens

5 - 6 leaves of Romaine or other leaf lettuce

3 - 4 leaves of spinach

Scrub organic carrots or peel the carrots if they are not organic. Clean and cut beet into slender wedges, and wash & dry lettuce and spinach leaves. Juice half of the carrots, and the beet, and then you may use the remaining carrots to help push the lettuce and spinach through the juicer.

Power punch

Juice 1 small beet.

Juice 1 pear.

Juice 1 Fiji apple.

Juice a small piece of ginger 2 inches max.

Juice 2 inches of salsify root.

Juice 4 individual celery stalks.

Juice 10-12 carrots.

Juice 1 small parsnip.

Sweet beets

5 Carrots

1 Apple

1/2 Beet

Refresher

4 Ounces of Raw Beet (with leaves)

3 Ounces of Raw Cucumber

9 Ounces Raw Carrot
